- 4 cod fillets (about 5 oz each)
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Lemon slices, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
- Pat the cod fillets dry with paper towels and arrange them in a single layer in the prepared baking dish.
- In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Pour the lemon-garlic mixture evenly over the cod fillets. Top with lemon slices.
- Bake for 16-18 minutes, or until the cod is opaque and flakes easily with a fork.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
