Delicious berry oat bars made with rolled oats, almond flour, and sweetened with honey or maple syrup.

- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1/4 teaspoon salt
- 2 cups mixed berries
- 2 tablespoons chia seeds
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare an 8×8-inch baking pan by lining it with parchment paper.
- Mix the dry ingredients in a large bowl: oats, almond flour, and salt. Stir until well combined.
- Combine the wet ingredients in another bowl: melted coconut oil, honey (or maple syrup), and lemon juice. Whisk until smooth.
- Fold the wet mixture into the dry ingredients until just combined.
- Add your choice of mixed berries to the mixture and gently fold them in.
- Spread the mixture evenly into your prepared baking pan and press down firmly.
- Bake in your preheated oven for about 25-30 minutes or until the edges are golden brown.
- Cool completely in the pan on a wire rack before lifting it out.
- Slice into bars once cooled and serve as a snack or breakfast treat.
Notes
- The chia seeds are optional and can be omitted if desired.
- For a richer taste, you can substitute coconut oil with butter.
