Description

Delicious berry oat bars made with rolled oats, almond flour, and sweetened with honey or maple syrup.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/4 teaspoon salt
  • 2 cups mixed berries
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking pan by lining it with parchment paper.
  3. Mix the dry ingredients in a large bowl: oats, almond flour, and salt. Stir until well combined.
  4. Combine the wet ingredients in another bowl: melted coconut oil, honey (or maple syrup), and lemon juice. Whisk until smooth.
  5. Fold the wet mixture into the dry ingredients until just combined.
  6. Add your choice of mixed berries to the mixture and gently fold them in.
  7. Spread the mixture evenly into your prepared baking pan and press down firmly.
  8. Bake in your preheated oven for about 25-30 minutes or until the edges are golden brown.
  9. Cool completely in the pan on a wire rack before lifting it out.
  10. Slice into bars once cooled and serve as a snack or breakfast treat.

Notes

  • The chia seeds are optional and can be omitted if desired.
  • For a richer taste, you can substitute coconut oil with butter.
