- 1 large bell pepper, diced (any color)

- 6 cups vegetable broth (or water)

- 1 teaspoon cumin (optional)
- Salt and pepper to taste
- Fresh herbs (such as parsley or cilantro) for garnish
Instructions
- Start by washing and chopping your cabbage, onions, carrots, bell peppers, and tomatoes.
- In a large pot, heat the olive oil over medium heat. Add onions and garlic; cook until soft and fragrant, about 3-4 minutes.
- Stir in the carrots and bell peppers. Sauté them for another 5 minutes until they begin to soften.
- Toss in the chopped cabbage and mix well, allowing it to wilt slightly.
- Add the vegetable broth and tomatoes to the pot. Stir in cumin (if using) along with salt and pepper. Bring the mixture to a gentle boil.
- Reduce the heat and let your soup simmer for 20-25 minutes, allowing the flavors to meld perfectly together.
- Once cooked, ladle the soup into bowls, garnish with fresh herbs, and enjoy your hearty meal!
