A delicious recipe for lemon garlic chicken that is quick and easy to prepare.

- 1 lb chicken breasts, boneless and skinless
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter, divided
- 2 cloves garlic, minced
- 3/4 cup chicken broth
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
- 4 slices lemon (optional, for garnish)
Instructions
- Slice each chicken breast in half horizontally to make thin cutlets, then gently pound to 1/2 inch thickness. Season both sides with salt and pepper.
- Dredge the chicken pieces lightly in flour, shaking off any excess.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown and fully cooked. Transfer to a plate.
- Lower the heat to medium. Add 1 tablespoon butter and garlic to the skillet. Cook for 30 seconds until fragrant.
- Pour in the chicken broth and lemon juice, scraping up the brown bits from the pan. Let it simmer for 3-5 minutes to reduce slightly.
- Stir in the capers and the remaining tablespoon of butter. Return the chicken to the pan and spoon sauce over it. Simmer for another 2-3 minutes.
- Garnish with chopped parsley and lemon slices. Serve immediately.
