Description

A delicious recipe for lemon garlic chicken that is quick and easy to prepare.


Ingredients

  • 1 lb chicken breasts, boneless and skinless
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter, divided
  • 2 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped
  • 4 slices lemon (optional, for garnish)

Instructions

  1. Slice each chicken breast in half horizontally to make thin cutlets, then gently pound to 1/2 inch thickness. Season both sides with salt and pepper.
  2. Dredge the chicken pieces lightly in flour, shaking off any excess.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown and fully cooked. Transfer to a plate.
  4. Lower the heat to medium. Add 1 tablespoon butter and garlic to the skillet. Cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and lemon juice, scraping up the brown bits from the pan. Let it simmer for 3-5 minutes to reduce slightly.
  6. Stir in the capers and the remaining tablespoon of butter. Return the chicken to the pan and spoon sauce over it. Simmer for another 2-3 minutes.
  7. Garnish with chopped parsley and lemon slices. Serve immediately.
