Ingredients

- 4 large yellow onions
- 4 tablespoons unsalted butter
- 1 cup beef broth or vegetable broth
- 4 garlic cloves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel the onions and trim the tops slightly, keeping the roots intact. Score an “X” on top of each onion.
- Place onions in a snug baking dish and tuck garlic cloves between them.
- Pour broth into the dish until it comes halfway up the sides of the onions.
- Add butter over the tops of the onions and season with salt and pepper.
- Cover with foil and bake for 45 minutes.
- Uncover, baste the onions with pan juices, and continue roasting for 30–40 minutes until golden and tender.
- Spoon with the buttery broth, garnish with parsley, and serve warm.
