Description

Delicious roasted onions infused with garlic and savory broth.


Ingredients

Scale
  • 4 large yellow onions
  • 4 tablespoons unsalted butter
  • 1 cup beef broth or vegetable broth
  • 4 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the onions and trim the tops slightly, keeping the roots intact. Score an “X” on top of each onion.
  3. Place onions in a snug baking dish and tuck garlic cloves between them.
  4. Pour broth into the dish until it comes halfway up the sides of the onions.
  5. Add butter over the tops of the onions and season with salt and pepper.
  6. Cover with foil and bake for 45 minutes.
  7. Uncover, baste the onions with pan juices, and continue roasting for 30–40 minutes until golden and tender.
  8. Spoon with the buttery broth, garnish with parsley, and serve warm.
