Description

Deliciously stuffed beef roast with a savory rice and vegetable filling.


Ingredients

  • 3 pounds beef roast
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 cup diced bell peppers
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup beef broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until soft.
  3. Add bell peppers, thyme, salt, and pepper, cooking until bell peppers are tender.
  4. In a bowl, combine the sautéed mixture with cooked rice and beef broth.
  5. Cut a pocket into the beef roast and stuff it with the rice mixture.
  6. Place the roast in a roasting pan and cook for about 1 to 2 hours, or until the desired doneness.
  7. Let it rest for 10 minutes before slicing.
