Ingredients

- 3 pounds beef roast
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup diced bell peppers
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup beef broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onions and garlic until soft.
- Add bell peppers, thyme, salt, and pepper, cooking until bell peppers are tender.
- In a bowl, combine the sautéed mixture with cooked rice and beef broth.
- Cut a pocket into the beef roast and stuff it with the rice mixture.
- Place the roast in a roasting pan and cook for about 1 to 2 hours, or until the desired doneness.
- Let it rest for 10 minutes before slicing.
