Description

A delicious peach cobbler made with fresh peaches or canned peaches, topped with a sweet batter that bakes to a golden brown.


Ingredients

  • 67 fresh peaches, peeled and sliced (or 4 cups canned peaches, drained)
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the peach slices, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract. Stir until the peaches are well coated and the mixture thickens slightly.
  3. Pour the peaches into a greased 9-inch baking dish, spreading them evenly.
  4. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Pour in the melted butter, milk, and vanilla extract, then stir until a thick batter forms. The mixture should be smooth but not too runny.
  6. Drop spoonfuls of the batter evenly over the peach mixture. Use a spatula to spread it slightly, but leave some peaches exposed to create a rustic texture. The topping will expand and crisp up while baking.
  7. Place the dish in the preheated oven and bake for 35–40 minutes, or until the topping turns golden brown and the peach filling bubbles around the edges.
  8. Remove from the oven and let it cool for about 10 minutes to allow the filling to thicken.
