A delicious peach cobbler made with fresh peaches or canned peaches, topped with a sweet batter that bakes to a golden brown.

- 6–7 fresh peaches, peeled and sliced (or 4 cups canned peaches, drained)
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ cup granulated sugar

- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- ½ cup whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the peach slices, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract. Stir until the peaches are well coated and the mixture thickens slightly.
- Pour the peaches into a greased 9-inch baking dish, spreading them evenly.
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Pour in the melted butter, milk, and vanilla extract, then stir until a thick batter forms. The mixture should be smooth but not too runny.
- Drop spoonfuls of the batter evenly over the peach mixture. Use a spatula to spread it slightly, but leave some peaches exposed to create a rustic texture. The topping will expand and crisp up while baking.
- Place the dish in the preheated oven and bake for 35–40 minutes, or until the topping turns golden brown and the peach filling bubbles around the edges.
- Remove from the oven and let it cool for about 10 minutes to allow the filling to thicken.

- Serve warm with a scoop of vanilla ice cream for an extra treat.
