Description

This brined turkey recipe ensures a moist and flavorful bird perfect for any occasion.


Ingredients

  • 16 cups water
  • 1 1/2 cups kosher salt
  • 1 cup brown sugar
  • 2 oranges, sliced
  • 2 lemons, sliced
  • 6 garlic cloves, smashed
  • 3 bay leaves
  • 1 tablespoon whole peppercorns
  • 1 large onion, quartered
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 sprigs fresh sage
  • 8 cups ice

Instructions

  1. In a large pot, bring water, kosher salt, and brown sugar to a boil. Stir until fully dissolved.
  2. Turn off the heat and add oranges, lemons, garlic, bay leaves, peppercorns, onion, and fresh herbs. Let steep for 15–20 minutes.
  3. Add ice to cool the brine completely before adding the turkey.
  4. Submerge the turkey (breast-side down) into the cooled brine. Add water if needed to cover completely.
  5. Cover and refrigerate for 12 to 24 hours.
  6. Remove the turkey, rinse under cold water, and pat dry thoroughly.
  7. Let the turkey rest in the fridge uncovered for 1–2 hours for crispier skin.
  8. Roast the turkey using your preferred method.

Notes

  • This brine can also be used for chicken or other poultry.
