- 8 oz Spaghetti or Linguine (choose your favorite variety)
- 2 tbsp Olive Oil (enhances flavor and prevents sticking)
- 1 lb Shrimp (peeled and deveined) (fresh or frozen, thawed before cooking)
- 3 cloves Garlic (minced)
- 1 tsp Red Pepper Flakes (adjust according to spice preference)
- 2 cups Cherry Tomatoes (diced)
- 1 cup Fresh Basil (chopped)
- 2 tbsp Lemon Juice (freshly squeezed)
Instructions
- Boil a large pot of salted water and cook your favorite pasta according to package instructions until al dente, about 8-10 minutes.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant and slightly golden.
- Toss in the shrimp, seasoning them with salt and pepper. Cook for 3-4 minutes until they turn pink and opaque.
- Stir in diced tomatoes and spinach (or your choice of veggies). Cook for another 2-3 minutes until the tomatoes soften and the spinach wilts.
- Drain the cooked pasta, reserving a bit of pasta water. Add the pasta to the skillet, tossing everything together.
- Remove from heat, sprinkle with fresh basil or parsley, and serve warm.
Notes
- Feel free to adjust the amount of red pepper flakes according to your spice preference.
- This dish pairs well with a sprinkle of grated Parmesan cheese on top.
