Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp vegetable oil (canola or grapeseed)
  • 1 tbsp sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prepare your ingredients: Wash and pat dry the chicken breasts.

  2. Marinate the chicken: In a bowl, mix sweet chili sauce, soy sauce, lime juice, and minced garlic. Add chicken breasts and marinate for at least 30 minutes.

  3. Sear the chicken: Heat vegetable oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and sear for about 5-7 minutes on each side until golden brown.

  4. Add sauce back in: Pour the reserved marinade over the seared chicken and let simmer until thickened, about 5 minutes.

  5. Garnish and serve: Transfer to a serving platter, sprinkle with sesame seeds and green onions, then serve hot with rice or noodles.
