Description

A delicious chicken salad with grapes, pecans, and a creamy dressing.


Ingredients

  • 2 cups cooked, diced or shredded chicken
  • 3 stalks of celery, diced (about 1/2 cup)
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper, to taste

Instructions

  1. Prep and clean your grapes: Soak grapes in a water-filled bowl with 1 teaspoon of baking soda for 5 minutes, rinse and dry them before slicing.
  2. Combine the chicken and veggies: In a large bowl, mix the chicken, celery, grapes, pecans, and red onion.
  3. Create the creamy dressing: In a separate bowl, mix together Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, and a sprinkle of salt and pepper until smooth.
  4. Mix the dressing with the salad: Pour the dressing over the chicken and veggie mixture and gently fold until everything is covered.
  5. Taste and adjust seasoning: Taste the salad and adjust seasoning with salt, pepper, or lemon juice as needed.
  6. Chill or serve immediately: Serve right away or refrigerate for a few hours for enhanced flavors.
