A delicious chicken salad with grapes, pecans, and a creamy dressing.
Ingredients

- 2 cups cooked, diced or shredded chicken
- 3 stalks of celery, diced (about 1/2 cup)
- 1 cup sliced grapes
- 1/3 cup chopped pecans
- 1/3 cup chopped red onion
- 1/2 cup plain Greek yogurt
- 1/4 cup mayo
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1–2 teaspoons fresh lemon zest
- Salt and pepper, to taste
Instructions
- Prep and clean your grapes: Soak grapes in a water-filled bowl with 1 teaspoon of baking soda for 5 minutes, rinse and dry them before slicing.
- Combine the chicken and veggies: In a large bowl, mix the chicken, celery, grapes, pecans, and red onion.
- Create the creamy dressing: In a separate bowl, mix together Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, and a sprinkle of salt and pepper until smooth.
- Mix the dressing with the salad: Pour the dressing over the chicken and veggie mixture and gently fold until everything is covered.
- Taste and adjust seasoning: Taste the salad and adjust seasoning with salt, pepper, or lemon juice as needed.
- Chill or serve immediately: Serve right away or refrigerate for a few hours for enhanced flavors.
