Description

Delicious and healthy banana oat muffins made with ripe bananas and wholesome ingredients.


Ingredients

  • 3 ripe bananas (mashed)
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour (or whole wheat)
  • 1/2 cup brown sugar (or coconut sugar)
  • 2 large eggs
  • 1/3 cup milk (or nut milk)
  • 1/4 cup melted butter (or coconut oil)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth, leaving some chunks for texture.
  3. Add eggs, milk, and melted butter to the mashed bananas; mix until well combined.
  4. In another bowl, whisk together oats, flour, brown sugar, baking powder, cinnamon, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Scoop the batter into muffin cups evenly and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
