- 1 cup old-fashioned oats
- 1 cup all-purpose flour (or whole wheat)
- 1/2 cup brown sugar (or coconut sugar)
- 2 large eggs
- 1/3 cup milk (or nut milk)
- 1/4 cup melted butter (or coconut oil)
- 1 tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth, leaving some chunks for texture.
- Add eggs, milk, and melted butter to the mashed bananas; mix until well combined.
- In another bowl, whisk together oats, flour, brown sugar, baking powder, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Scoop the batter into muffin cups evenly and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
