Description

Delicious beef enchiladas topped with cheese and garnished with fresh ingredients.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 cup green enchilada sauce (plus extra for topping)
  • 8 corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/4 cup red onion, finely diced (for garnish)
  • 1 medium tomato, diced (for garnish)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  3. Stir in minced garlic and sauté for another minute.
  4. Add ground beef, breaking it up with a spatula, and cook until browned. Drain excess fat.
  5. Sprinkle taco seasoning over beef and stir to combine. Remove from heat.
  6. In a separate pan, warm tortillas for 15–20 seconds per side until pliable.
  7. Spread a thin layer of green enchilada sauce on the bottom of a 9×13 baking dish.
  8. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
  9. Pour remaining enchilada sauce over the rolled tortillas.
  10. Top generously with shredded cheese.
  11. Cover with foil and bake for 20 minutes.
  12. Remove foil and bake for another 10 minutes until the cheese is bubbly and golden.
  13. Garnish with red onion, tomato, cilantro, and lime wedges. Serve hot.

Notes

  • For extra flavor, let the beef mixture sit for 10 minutes before filling the tortillas.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
