Delicious beef enchiladas topped with cheese and garnished with fresh ingredients.

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1 cup green enchilada sauce (plus extra for topping)
- 8 corn tortillas
- 2 cups shredded Mexican cheese blend
- 1/4 cup red onion, finely diced (for garnish)
- 1 medium tomato, diced (for garnish)
- 1/4 cup fresh cilantro, chopped (for garnish)
- Lime wedges, for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent.
- Stir in minced garlic and sauté for another minute.
- Add ground beef, breaking it up with a spatula, and cook until browned. Drain excess fat.
- Sprinkle taco seasoning over beef and stir to combine. Remove from heat.
- In a separate pan, warm tortillas for 15–20 seconds per side until pliable.
- Spread a thin layer of green enchilada sauce on the bottom of a 9×13 baking dish.
- Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas.
- Top generously with shredded cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10 minutes until the cheese is bubbly and golden.
- Garnish with red onion, tomato, cilantro, and lime wedges. Serve hot.
Notes
- For extra flavor, let the beef mixture sit for 10 minutes before filling the tortillas.
- These enchiladas can be made ahead of time and stored in the refrigerator before baking.
