Description

A delicious chocolate carrot cake that is moist and flavorful, topped with cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour (sifted)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots (about 3 medium carrots)
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup butter (softened)
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, mix together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, whisk together the vegetable oil, eggs, grated carrots, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared pans.
  6. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  8. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar and milk, mixing until well combined and fluffy.
  10. Stir in the vanilla extract.
  11. Once the cakes are completely cooled, place one layer on a serving plate.
  12. Spread a generous amount of frosting on top of the first layer.
  13. Place the second layer on top and frost the top and sides of the cake.
  14. Decorate with additional grated carrots or chocolate shavings if desired.

Notes

  • Make sure to sift the flour to prevent clumps in the batter.
  • This cake can be stored in the refrigerator due to the cream cheese frosting.
