Description
A delicious chocolate carrot cake that is moist and flavorful, topped with cream cheese frosting.

- 2 cups all-purpose flour (sifted)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 1 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots (about 3 medium carrots)
- 1 teaspoon vanilla extract
- 8 oz cream cheese (softened)
- 1/2 cup butter (softened)
- 4 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, mix together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk together the vegetable oil, eggs, grated carrots, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Divide the batter evenly between the prepared pans.
- Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar and milk, mixing until well combined and fluffy.
- Stir in the vanilla extract.
- Once the cakes are completely cooled, place one layer on a serving plate.
- Spread a generous amount of frosting on top of the first layer.
- Place the second layer on top and frost the top and sides of the cake.
- Decorate with additional grated carrots or chocolate shavings if desired.
Notes
- Make sure to sift the flour to prevent clumps in the batter.
- This cake can be stored in the refrigerator due to the cream cheese frosting.
