- 24 maraschino cherries, well-drained and dried
- 2 cups shredded sweetened coconut
- 1 cup powdered sugar
- 1/2 teaspoon almond extract
- 1 1/2 cups dark or semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Drain the maraschino cherries and pat them completely dry with paper towels.
- In a bowl, mix shredded coconut, powdered sugar, and almond extract until well combined.
- Scoop about 1 tablespoon of the mixture, flatten it, and wrap it around each cherry to form a ball.
- Place all wrapped truffles on a parchment-lined tray and refrigerate for 30 minutes.
- Melt chocolate chips with coconut oil in the microwave or over a double boiler until smooth.
- Dip each chilled truffle in melted chocolate using a fork, letting excess drip off.
- Return dipped truffles to the tray, garnish with shredded coconut or cherry halves if desired.
- Refrigerate for 15–20 minutes until chocolate is completely set.
