Delicious beef enchiladas made with seasoned ground beef, enchilada sauce, and melted cheese.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce
- 8 small flour tortillas
- 2 cups shredded Mexican cheese blend
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned, then drain excess grease.
- Stir in the taco seasoning and 1/4 cup of water, simmering for 5 minutes.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with seasoned beef, roll tightly, and place seam-side down in the dish.
- Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Serve hot with your favorite toppings like sour cream or chopped cilantro.
Notes
- For a spicier kick, add diced jalapeños to the filling.
- You can use corn tortillas instead of flour if preferred.
- Leftovers can be stored in the refrigerator for up to 3 days.
