Description

Delicious beef enchiladas made with seasoned ground beef, enchilada sauce, and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) red enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned, then drain excess grease.
  3. Stir in the taco seasoning and 1/4 cup of water, simmering for 5 minutes.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with seasoned beef, roll tightly, and place seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
  7. Bake for 20 minutes or until the cheese is melted and bubbly.
  8. Serve hot with your favorite toppings like sour cream or chopped cilantro.

Notes

  • For a spicier kick, add diced jalapeños to the filling.
  • You can use corn tortillas instead of flour if preferred.
