- 4 cups chopped green cabbage (about 1/2 medium head)
- 2 cups Fritos corn chips (original flavor)
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 1 bell pepper, diced (any color)
- 2 tablespoons taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (optional)
Instructions
- Prepare your ingredients by washing and chopping the cabbage into bite-sized pieces.
- In a skillet over medium heat, sauté the diced onion and bell pepper in a drizzle of oil until soft, about 5 minutes.
- Add the ground beef and cook until browned, breaking it apart as it cooks (about 7 minutes).
- Stir in taco seasoning until well combined.
- Fold in the chopped cabbage, cover the skillet, and steam for about 10 minutes until wilted but still vibrant.
- Remove from heat and sprinkle shredded cheese over the top; let it melt slightly before serving.
Notes
- Serve with a dollop of sour cream for added creaminess.
