Description
A delicious and creamy salad dressing made with fresh herbs and aromatics.
Ingredients

- 1/2 cup mayonnaise (or sour cream)
- 1/2 cup plain Greek yogurt
- 2 tsp garlic paste
- 2 green onions
- 2 tbsp fresh dill
- 2 tbsp fresh chives
- 1/4 cup fresh parsley leaves (loosely packed)
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1 cup spinach
- 1/2 tsp salt
- 1 tsp black pepper
- 2 tbsp lemon juice (1 lemon)
- 2 tbsp olive oil
- 1/2 avocado (optional)
Instructions
- Blend creamy ingredients with aromatics and herbs. In a food processor, add mayo, yogurt, garlic, green onions, dill, chives, and parsley. Blend until smooth.
- Add vegetables and seasonings. Next, add in honey, Dijon mustard, spinach, salt, pepper, and lemon juice. Add avocado if using. Blend again until smooth, scraping down the sides if needed.
- Add oil. With the lid on, using the opening in the top, blend dressing while slowly pouring in olive oil. Blend until smooth.
- Season. Taste and add more salt as needed.
- Store dressing. Use a funnel to pour dressing into a jar. Chill in the fridge until ready to serve.
Notes
- This dressing can be made in advance and stored in the refrigerator for up to one week.
- Feel free to substitute the herbs based on your preference.
