Description

A deliciously marinated lamb leg that is roasted to perfection, featuring flavors of honey, soy sauce, and fresh herbs.


Ingredients

Scale
  • 2 pounds boneless lamb leg (trimmed and tied)
  • 1/2 cup honey (preferably local)
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon black pepper (freshly ground)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. In a bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, chopped rosemary, and black pepper until well combined.
  2. Place the boneless lamb leg in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 350°F (175°C).
  4. Remove the lamb from the marinade and place it in a roasting pan. Reserve the marinade for basting.
  5. Roast in the preheated oven for about 90 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Baste the lamb with the reserved marinade every 30 minutes during roasting.
  7. Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  8. Garnish with chopped parsley before serving.

  • This dish is best served alongside roasted vegetables or a fresh salad.
  • Marinating overnight will enhance the flavors significantly.
