Description

A delicious, savory-sweet salmon dish that features a citrus glaze and roasted vegetables.

Ingredients

Scale
  • 4 filets Salmon (Choose skin-on fillets for best flavor and presentation.)
  • 2 tablespoons Honey (Natural sweetener for glaze; can substitute with maple syrup or agave nectar.)
  • 1 large Blood Orange (Offers sweetness and color; any seasonal orange can be substituted.)
  • 1 large Lemon (Adds acidity; try Meyer lemons for a sweeter taste.)
  • 1/4 cup Orange Juice (Freshly squeezed enhances the dish.)
  • 2 tablespoons Lemon Juice (Fresh is key for brightness.)
  • 1 bulb Fennel (Provides a crunchy texture; bok choy or celery make good substitutes.)
  • 1 tablespoon Fresh Thyme (Enhances earthy notes; can use dried thyme (½¾ tsp).)
  • 1 medium Red Chile or Serrano Chile (Adds heat; substitute with crushed red pepper flakes if desired.)
  • 2 tablespoons Extra Virgin Olive Oil (Necessary for flavor; can use avocado or grapeseed oil.)
  • 1 teaspoon Chili Powder (Infuses warmth.)
  • 1 teaspoon Cumin (Infuses depth.)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with non-stick spray.
  2. In a medium bowl, whisk together honey, orange juice, lemon juice, chili powder, and cumin.
  3. Place salmon filets in a resealable bag and pour the marinade over; mix in a bowl.
  4. Add olive oil, salt, and pepper to the sliced vegetables; toss well and transfer to the baking dish.
  5. Place marinated salmon filets on top of the fennel mixture, skin side down. Brush with reserved marinade.
  6. Roast in the oven for 15-25 minutes until salmon flakes easily and is no longer translucent.
  7. Remove from oven and drizzle remaining marinade over salmon; serve immediately.

Notes

  • This dish pairs wonderfully with a side of rice or quinoa.
  • Adjust the spice level by using more or less chili pepper as preferred.
  • Using seasonal ingredients enhances flavor and freshness.
