Delicious and easy-to-make chocolate peanut butter oat bars that are perfect for a snack or dessert.

- 1 cup natural peanut butter (smooth or crunchy)
- 1 cup honey or maple syrup (as a sweetener)
- 2 cups rolled oats
- 1 cup chocolate chips (use dairy-free if needed)
- 1 teaspoon vanilla extract
- to taste Chopped nuts
- to taste Sea salt
- to taste Shredded coconut
Instructions
- In a medium saucepan over low heat, combine the natural peanut butter and honey (or maple syrup). Stir until smooth and combined, about 2-3 minutes.
- Remove from heat and add rolled oats and vanilla extract. Stir well until evenly coated.
- Line an 8×8 inch baking dish with parchment paper. Pour the oat mixture in and press down evenly.
- Melt chocolate chips in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.
- Pour melted chocolate over the oat mixture and spread evenly. Add optional toppings if desired.
- Chill in the refrigerator for at least 2 hours until chocolate is set.
- Lift the bars out using the parchment paper and cut into squares or rectangles before serving.
