Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tablespoon vanilla extract
- 1 tablespoon orange zest
- 1/2 cup orange juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix together buttermilk, melted butter, egg, vanilla extract, orange zest, and orange juice.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
- Make sure not to overmix the batter for fluffy muffins.
- Store in an airtight container for up to 3 days.
