A quick and delicious microwave mug cake made with simple ingredients.

- 2 tablespoons unsalted butter, melted plus extra to grease the mug
- 3 tablespoons granulated sugar
- 1 tablespoon light brown sugar, packed
- 1 large egg yolk, room temperature
- 3 tablespoons milk, any kind
- 1/2 teaspoon vanilla extract
- 1/3 cup all-purpose flour, spooned and leveled
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1 pinch salt
- 1/4 cup finely chopped peeled apple, about half a small apple
- 2 tablespoons powdered sugar, for glaze (optional)
- 2 teaspoons milk, for glaze (optional)
- 1/8 teaspoon vanilla extract, for glaze (optional)
Instructions
- Lightly grease a microwave safe mug at least 12 ounces with a little butter or nonstick spray.
- Add the butter to the mug and microwave for 15 to 20 seconds until just melted.
- Stir in the granulated sugar and light brown sugar until the mixture looks smooth and glossy.
- Whisk in the egg yolk, milk, and vanilla extract until fully combined with no streaks of egg.
- Add the flour, baking powder, cinnamon, and salt and gently stir until you no longer see dry flour; the batter will be thick.
- Fold in the finely chopped apple making sure the pieces are evenly distributed through the batter.
- Microwave the mug cake on high for 60 to 80 seconds until the top is set and springs back lightly while the center still looks soft; do not overcook.
- Let the cake rest for 1 to 2 minutes.
- In a small bowl, stir together the powdered sugar, milk, and vanilla for the glaze until smooth, then drizzle over the warm cake.
- Serve straight from the mug while warm and enjoy.
