Description

A delicious and hearty soup with Italian sausage, potatoes, and kale cooked in a creamy broth.


Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium Yukon Gold potatoes, diced
  • 2 cups chopped kale (or spinach)
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)
  • Grated Parmesan cheese, for garnish

Instructions

  1. Brown the sausage in a large pot over medium heat, breaking it apart, then set aside.
  2. In the same pot, sauté onions in olive oil until translucent, about 3–4 minutes. Add garlic and cook for 1 minute.
  3. Add diced potatoes and chicken broth, season with salt and pepper, and simmer until potatoes are tender, about 10–15 minutes.
  4. Stir in chopped kale and cook until just tender, about 5 minutes.
  5. Return the sausage to the pot and pour in heavy cream. Stir gently over low heat until heated through. Adjust seasoning if necessary.
  6. Serve in bowls with grated Parmesan and optional red pepper flakes.

Notes

  • This soup can be made ahead of time and reheated.
  • Feel free to substitute kale with spinach if preferred.
  • For added flavor, consider using homemade chicken broth.
